We saw this behaviour in 2021 after switching to relevance search. Microsoft advised that it was caused by the property "Is Searchable" being set to false in the database on these columns, despite it being set to true in the interface.
The fix was to remove each affected column from the quick find view in question, save & publish, and then restore the columns to the view, again save & publish. After a short time the data became visible.
For us, it affected multiple columns in multiple tables. I believe we did this one column at a time, but I do not know if that was necessary, or whether making the changes in bulk would work just as well.

Has anyone experienced an issue with dataverse search not displaying field values? If I enter one of those records and then hit back that particular records data is then visible. This only seems to be an issue for Contact records.
