Did you know you can do this in Dynamics 365?

    Hi Sunil,

This allows any user to track emails and appointments by simply assigning a category to the item. The user won't need the Outlook client to be able to track these records to Dynamics 365. Also, setting a category can be done automatically with Exchange Rules, which means you can automate tracking. Zero clicks.

I.E. Any email received from a particular domain (I.E. Customer) will be automatically tracked in Dynamics 365. Or perhaps any emails received by a support mailbox can be automatically tracked in Dynamics 365.

Tons of people use Outlook categories in their day to day activities and emails, so this gives them an extra category allowing them to track which means training is minimal and user experience is not affected.
