I recently discovered a bug when you try to modify a Send Email step in a Power Apps workflow. This error occurs when you try to set the email properties after you add the Send Email step.
If your default form says
"Enhanced Email" like it does here, this is what is causing your problem.
Once I changed the form to
"Email" I was able to do my work as normal.
I'm not sure why Enhanced Email is causing these problems, but hopefully it will be fixed before too long. Until then, I hope that this helps someone else who encounters this problem.
