CRM 2013 with Exchange 2016

Our Infrastructure team is trying to upgrade to Exchange 2016 before we get CRM upgraded from 2013. 2016 is clearly not on the list of Exchange versions compatible with CRM 2013 (see below), so at face value this seems like a no-go. I wonder, however, if this compatibility is only required for certain components, like maybe Server-Side Sync. It seems to me that if we use the CRM 2013 for Outlook client with with a compatible Outlook version to sync emails and ACTs, then the Exchange version might be irrelevant. Does anyone have some experience to tell me if this conclusion is accurate and/or what specific components are involved in the CRM/Exchange integration?

Any information at all would be greatly appreciated.
