When you start a template from D365, you have a blank word doc - you can actually paste the content from your exiting document instead of building it from scratch and then adjust it as needed to remove static content and replace it with field content in the Developer Tab. You don't have to stay in your developer tab - you can use all the formatting techniques you would in a normal word doc.
I did a word template with a repeating table in it a while back. After pasting the form created by a business user, I removed all but 2 rows from their table - I left the header row and the first row of data. then, I went to each field in the first data row and replaced the value with an XML field. Then I set that row to repeating.

Gabriella, attached is a screenshot to build on Jill's answer. Make sure the N:1 relationship is included when you begin the template document, otherwise the related entity will not be available at the end of your primary entity XML fields. Also, your screenshot looks pretty ambitious. What entity will the template associate with?
