I would echo what and
@Wayne Walton already mentioned. But just add to combine both of their thoughts. Leverage OneNote for the meeting notes as it can integrate with Outlook to pull in the meeting attendees, topic, and date/time. Then, add the notes for that particular Opportunity from the Open Opportunity view.

Subject: CRM for Internal Status Meetings
Our internal sales teams have weekly meetings to discuss the status of a large strategic accounts. These conversations can touch upon many accounts, contacts, opportunities, etc. as they run through the status of where things are at and what needs to be done to keep things moving forward. They see a huge need for this intelligence to be stored within CRM but it doesn't just relate to one particular account/contact/opportunity. Typically they discuss multiple large opportunities and projects for a given account at the same time. They would like to document this within CRM during the meeting in real time to capture the most up-to-date information/tasks so those that can't attend the meeting are immediately able to understand what occurred and also link it to the appropriate entities within CRM. I haven't been able to find a solution for this with standard CRM functionality so wasn't sure if we need to look at a more collaborative 3rd party solution? The current solution is a lengthy formatted Word document that they update each week and very manually mark attendees, type new notes below the previous notes, then distribute via email to all afterwords.
