If you add the new data fields as part of the Opportunity, once it is closed as Won, you be required to change the status back to draft, update the data and then close again.
I would suggest that you create a related entity and capture the data in this new entity.
The new entity would allow you to update the data at any time regardless of the opportunity status, maybe also add a comments field too.

We're interested in using two fields on Opportunities to forecast billings expected. So when an opportunity is won, the user would put in the estimate start date and the expected completion date of the project and then close the opportunity as closed/won. So if the opportunity is won in January of 2021, but the job won't be started until March of 2021 and completed in April of 2021 we want to capture that. However, sometimes those estimated start dates and expected completion dates might change after the Opportunity is closed. We would like to be able to change those dates without re-opening the opportunity. Is there a way to do that? Or should we be capturing this data in some other way? Maybe using Forecasting?
