Is there any way to show the number of Notes (Count) in the conversation Tab ?

i remember seeing similar to this in CRM 2011, but ofcouse there was no conversation tab then. It was just Notes tab and i guess there was a possibility to show the count of notes.

with Dynamics 365, how do we show the same?

I did a little research and could not find any setting to display the number of notes in CRM.  Trying to find something on a Search didn't come up with anything because it is hard to define the requirement in a unique way.

If I was to do it I would add a number field to the Form and then on load of the form search the Annotation table for a count of Notes that have that Record's ID and populate it in the newly created Field on the Form.

Have you looked at using Microsoft Flow to do the rollup count? Or even a classic workflow to update a field value whenever a new note is created?
